Biscuits are taken very seriously here in the UK and rightly so. They’re deeply embedded into the culture and are an important staple in most households. Once it hits about 3pm, almost like clockwork, I find myself making a cup of tea and rummaging through the biscuit tin to see what’s available. My usual rotation includes chocolate bourbons, digestives or a ginger snap for day to day snacking. But every now and then, especially if I’ve got friends round, you might find an M&S white chocolate round, a viennese finger or a Bahlsen Choco Leibniz. And for really special occasions and special people, I whack out the Fortnum & Mason Toffolossus. At £27 a pack, these are most certainly not for everyday eating but my goodness, they are incredibly good.
This week I’ve conveniently combined the tea and biscuits and come up with these earl grey custard creams. Two buttery, fragrant biscuits sandwiched together with a simple buttercream that gets its yellow hue from some Birds custard powder. They’re delicious as is, but if you want something a bit more indulgent then I’ve given you the option to dip them in white chocolate, an idea that’s unashamedly inspired by the M&S versions.
