It is my sincerest belief that the sweetest summer tomato is better than any other fruit or vegetable in all of creation. I believe this so strongly, I feel personally affronted when someone says they don’t prefer tomatoes. I can only attribute this to encounters with bad tomatoes, which are abundant. But today, I’m offering you an utterly simple recipe, free of all the fanfare. It’s just three components: soft buttery brioche (I strongly recommend you make your own), one of France’s finest culinary contributions (Boursin) whipped into a fluffy cloud, and ripe, fragrant tomatoes.
