I’ve always loved seafood. Growing up on the east coast, I quickly became hooked on fish… and also “on phonics” because I’m not a great reader. I also lived in Iowa for 8 years. Because of that, I think corn belongs on everything. This week’s dish is a bit of middle ground between two places I love.
A buddy of mine, fellow hot dad Matt Starcher (aka MattDad), sent me a miscellaneous package of MaD Seasonings. He’s also on this season of Next Level Chef. If the great anthrax scare of the early 2000’s taught me anything, it’s don’t trust an unmarked package, but thankfully I knew this one was coming.
I’ve been trying to find excuses to use his seasonings whenever I cook, so I landed on grilled shrimp with a charred corn salsa. I also got to fire up the grill, which I’m always trying to justify.
I used his MaD Blue Seafood Seasoning for this one. It’s got some Old Bay vibes, but better; it’s great for shrimp, seafood boils, fish, or really anything that you can pull from the ocean.
