Here is a salad I make that goes with such things as BBQ’d or grilled mackerels/sardines, salmon, tandoori chicken, kebabs, steaks, pork ribs and chops, 5 spice roast duck, big lumps of meat and so on.
tomatoes - cut into bite size irregular chunks
use any ones you want - red, yellow, green, purple, large, small (cut in half, nto chunks) or even a mixed selection of them all
cucumber - cut into bite size irregular chunks
red onions - sliced thinly anyway you want, I like topped and tailed, skinned, cut in half top to bottom then each half sliced from top to bottom but it’s up to you, you could even leave them in bite size pieces
white onions - sliced thinly
large spring onions - whites sliced thinly, green bits can cut into short length
for the white bit I cut the onion about 1” above where the bulb turns into the thinner bit and cut them lengthwise into thin slices
garlic - thinly sliced
green chillies - thinly sliced
sea salt
ground black pepper
red wine vinegar
lemon juice
cider vinegar or rice wine vinegar or white wine vinegar if you have nothing else
fresh or dried mint - optional
Mrs Awkward says “no green shit” so I leave it out
Mix everything together in a non-metallic bowl (never use metallic bowls with an acid such as vinegar)
Leave for 10-15 mins stirring every few minutes.
Serve.
