Hi friends! Today I’m going to keep the blog short and sweet and get right into the gooey details. Literally, it’s in the name… these biscuits are swimming in butter, making them a gooey (not doughy), delicious mess that makes you come back for seconds and even thirds. There are other variations of swim biscuits you can make such as with icing and fruit on the top or even just plain biscuits swimming in butter! But I thought it would be interesting to throw pizza toppings on it and see if it would work. Spoiler alert: it worked.

Here’s what you’ll need:
1 stick butter
2 ½ cups flour
4 tsp baking powder
1 ½ tsp salt
1/4 cup sugar
2 cups buttermilk
1/2 cup pizza sauce
2 cups mozzarella cheese
Pepperonis or whatever toppings you like
Directions:
Begin by preheating the oven to 450 degrees.
In an 8x8 pan, add one stick of butter, cut up into 8 pieces and spread around the pan evenly. Place the pan in the oven to let the butter start to melt.
Meanwhile, let’s make the biscuit dough. To a large bowl, add the flour, baking powder, salt and sugar and whisk together. Add in the buttermilk and whisk together just until combined but do not overwork it.
Remove the pan from the oven and scoop the dough directly over the melted butter. Place the pan back in the oven for about 10 minutes. At this point, your biscuits will not be done but have started to setup.
Scoop the pizza sauce on top of the biscuits and spread around with a spoon. Add the cheese and pepperonis.
Place the pan back in the oven and let it cook for another 10-15 minutes or until cheese is golden brown and bubbly.
Let it cool and then enjoy!
