The Three Things I Never Skip on a Sunday

Sundays are my reset day, same as half the internet. But I've landed on something that actually works. Three simple things that get me into the week feeling prepared instead of behind before it even starts.

Something I cannot skip is planning out my meals. I use the 3-2-1 method most weeks: 3 dinners, 2 lunches, and 1 breakfast I’ll actually cook throughout the week. We’re a two-person household, so I plan for leftovers to cover lunches, and usually a Friday dinner out. I also work from home, so it’s mostly just breakfast and lunch for me most days, while Joey eats at work or takes leftovers with him.

I’m usually pulling recipe ideas from our family cookbook or Pinterest. Some weeks, like this one, which I’m literally doing right now, I fully wing it. Grab a few protein options, a ton of fruits and veggies, some rice or potatoes. I always marinate the chicken the day we’re actually eating it. In the summer we grill a lot, so it’s easy.

Here’s a little recipe of one of my all time favorite green salads that is a go-to for us in case you need a little inspo this week:

What you’ll need:
Enough romaine for the group you’re feeding
Green onion
Fresh dill
Feta
Olive oil
Salt
Lemon juice

What you’ll do:
Chop the romaine into bite sized pieces and toss into a bowl
Slice the green onion (maybe like 2 or 3) and throw in with the romaine
Chop up some dill (measure with your heart, I love a TON) and add that to the bowl
Drizzle the olive oil (you could make the dressing in a separate container, shake and dress… but that’s far too much work for me) so just do what you want here… maybe 2T?
Squeeze the juice of half a lemon
Add a pinch or a little more of salt
Top with feta (I love feta and I recommend going for a lot here)

I love to top with leftover grilled chicken thighs for a lunch <3

Next, I use my Google Tasks app to prep for the week. If you’re not using this, I highly recommend it. The best way to plan your week is different for everyone, but after trying every planner and calendar over the years, this is what works best for me.

I set up my Google Tasks lists as the days of the week, so each day gets its own to-do list. I treat the to-dos as my calendar, adding a task for every single thing on my agenda, meetings, meals, all of it. Workout classes, small to-dos I need to check off, chores, breakfast, lunch, dinner, meetings, calls, appointments. It lets me stay basically hands off throughout the day. I just check my list and pop things off as I go. When the list is empty, the day is complete :)

Each day now has thousands of completed tasks, because I just keep adding to the same days, week over week.

A little example of a day!!

Every single Sunday without fail, the bedding gets washed. There is truly nothing that sets my week up better than crawling into a freshly made bed Sunday night, lamp on, reading my book for an hour or more.

Those are my three non-negotiables. Not complicated. Not unique. But between my days planned out, my meals loosely figured out, and my bedding fresh, I walk into my week feeling like nothing can get in my way.
