Today, I’m baking a ramp and feta phyllo tart. This is a quick and easy recipe that highlights ramps (wild garlic) which are only in season for a few weeks in the springtime. They are delicious herby garlicky greens that I love to use in the springtime for a phyllo tart like this one.
This tart is formed using an easy “crinkle” method to create the crust that comes out flakey and golden. And I top the tart with whole blanched ramps, salty feta, and mozzarella cheese that melts to perfection. You can serve this tart for breakfast or lunch alongside soft boiled eggs and a fresh salad. You can find ramps at your local farmers market or you can even get them delivered to your door.
