I was having dinner with a patisserie chef from Israel and when the topic of honey came up, he told me Israel has a honey cartel run by the Council of Honey. They have an upper and lower limits to how much a honey farm is allowed to sell each year, and they have to sell to distributers and not the public, so there must be a middlemen, for example. To limit honey import, you are not allowed to have too much honey on you without a permit, and so even though jewish people traditionally eat honey at the start of the jewish year, they hardly eat any honey compare to Europe.
The dinner was yesterday and I keep getting texts about the honey cartel.
