I swore I wouldn’t buy another gadget after my beloved, and oft-used Homemade Yogurt Maker.
But then I saw some folks on the national internet making stuffed waffles using a new fangled contraption called the Presto Stuffler.
What can I say, I just needed it. I needed to see if it would work. I needed to try my low carb blueberry chaffle recipe in it.
I needed a pot roast sandwich, but make it keto.
And just to ensure that I didn’t throw $44 down the toilet, I filmed a video to share my experience with y’all.

You can make a chaffle sammie with any leftover meat laying around in your fridge, or you can go sweet and make stuffed Belgian waffles for the fam. I don’t use it for that second purpose, but the multi-purpose-ness of it all helps me justify getting a new gadget. The ladies will get it.

POT ROAST STUFFED CHAFFLE SAMMIE
(Yields 2 ginormous stuffed chaffle sandwiches)
Note: I used leftover Puttanesca Brisket Pot Roast, but you can use any pot roast or braised meat of your choice for the sandwich filling.

1 3/4 cup crushed plain pork rinds
1 1/2 cups shredded ColbyJack or cheddar cheese
4 eggs
2 tablespoons heavy cream
1/4 teaspoon cayenne pepper
1/4 teaspoon salt (if using unsalted pork rinds)
Avocado spray or olive oil spray for the waffle maker
Leftover pot roast, cut into small pieces
In a large mixing bowl, combine well the pork rinds, cheese, eggs, cream, cayenne pepper, and salt. Divide the mixture evenly in half and then each half evenly again to make four even sections of chaffle batter.
Spray the waffle maker with avocado oil spray and heat it up to make the first stuffed chaffle: place one section of the batter on the bottom side of the waffle maker, press in the pieces of the pot roast, then add a second section of batter on top using a spatula to spread it evenly.. Close the waffle maker and cook for 3-4 minutes, flipping the waffle maker halfway through. When the waffle maker opens and the chaffle is golden brown, cooked through, and removes easily from the waffle maker, the sandwich is ready. Repeat the second time with the remaining chaffle batter and pot roast pieces. Cut each sammie in half and serve immediately.
