Every now and then, the market hands you a layup. This week in Southern California, pork belly has been sitting at $4/lb at Whole Foods — and that’s one of those rare moments where a luxury cut turns into weeknight food. So I grabbed a slab and did what any rational person should do - Turn it into sticky, caramelized, candied pork belly bites—with a deeper, umami-loaded glaze.
Pork belly doesn’t need hours to break down like a chuck roast.
You’re not chasing collagen here—you’re rendering fat, softening the meat and building a crust
That’s why this works in under 2 hours.
Ingredients
1 lb pork belly, cut into 1–1.5” cubes
2 tbsp kosher salt
1 tbsp black pepper
1/4 cup brown sugar
2 tbsp maple syrup
1 tbsp honey
1 tbsp apple cider vinegar
1 tbsp Worcestershire
1 tbsp soy sauce
zest of 1/2 lemon
1 tsp smoked paprika (optional)
1/2 tsp chili flakes (optional)
1–2 tbsp butter
squeeze of lemon juice
flaky salt
Preheat oven to 300°F
Season pork with salt and pepper
Place on a rack over a tray
Roast:
75–90 minutes
You’re looking for:
fat rendered
tender cubes
light structure on the outside
In a sauté pan, add all glaze ingredients.
Bring to a gentle simmer and reduce for 3–5 minutes until slightly thickened.
You’ll see:
bubbles tightening
sauce starting to coat the spoon
Add the pork belly directly into the pan.
Toss to coat
Simmer gently for 5–7 minutes
What’s happening:
sauce reduces further
pork absorbs flavor
glaze turns sticky and lacquered
Important: Keep it at a simmer, not a hard boil—don’t break the glaze.
Turn heat to low.
Add:
1–2 tbsp butter
Toss continuously until:
sauce goes glossy
emulsifies
clings to the pork like a proper glaze
This is the difference between “sweet pork” and a restaurant-quality finish.
Right at the end:
squeeze of lemon juice
pinch of flaky salt
Now you’ve got:
sweet
salty
umami
bright
rich
All in balance.
Want softer? extend oven to 90 min or loosely cover early
Want firmer bites? stick closer to 75 min and reduce sauce harder
