I’m not intending to create a baking Substack but you might think otherwise with the amount of muffins and cakes coming out of my kitchen these days. It’s been a cold spring and having the oven on feels good right now. This recipe was written in my note book a few years ago. I recently found it when looking for a savory muffin to serve with soup. It has mashed sweet potato whisked into the batter and I happened to have white sweet potatoes on hand. I never use the white variety for meals but they’re great for steaming and using in muffins or grating into waffles. The creamy white color keeps baked goods light-colored which signals “store bought” to Ezra. This recipe is a version of my sisters version of my mother’s version of
