Potato diet day 3

The hardest part about the potato diet is eating enough potatoes to meet your daily maintenance calories and not go into starvation. This is what gave me problems last time. I'm hitting it again right now. I tried to force feed potatoes yesterday and only managed to eat like 75% of what I aimed for. This is fine sometimes but won't be sustainable. I am also getting calories from olive oil, unsweetened oat milk, and ketchup, so maybe I'm okay, but I don't want to rely on that.

I guess one solution could be to start eating earlier in the day. So far I've been unintentionally delaying eating because I set the Instant Pot up in the morning and then start working and don't break for food for a couple of hours. This could be trivially fixed if I just set up the Instant Pot like half an hour earlier, so I will try that tomorrow.

Speaking of the Instant Pot, something I'm doing this time around that I didn't do last time is leaving it plugged in on “keep warm” for just the whole day, and dipping in to get potatoes when it's eating time. This is a huge improvement over last time when I immediately stored the potatoes I had cooked in the fridge. Even six hours after cooking they come out of the pot as fresh and good as ever, which further incentivizes me to eat. Today I made a bag of yellow potatoes and they are definitely my favorite so far. Just crush one up in a bowl with a fork, grind some sea salt on top, and you've got a meal.
