This tomato-ginger baked rice can be eaten all on its own. I mean, it’s rice cooked with roasted cherry tomatoes, ginger, and garlic, so it’s fragrant, tangy, just barely light pink. Put an egg on that and call it dinner.
But it’s also a building block: Stow it in the fridge, then use it to jump-start three dinners throughout the week. These meals really just require assembly since all the flavor development happened when you made the rice.
