120 g de harina para repostería (cake flour)
115 g de harina panadera (bread flour)
4 g de bicarbonato de sodio
4 g de polvo para hornear
3 g de sal fina
140 g de mantequilla con sal, a temperatura ambiente
145 g de azúcar morena oscura
125 g de azúcar blanca granulada
1 huevo grande (50 g)
7 g de pasta de vainilla
225 g de chips de chocolate con leche *también puedes usar chocolate semiamargo, picado grueso
Sal marina en escamas, para terminar
Precalienta el horno a 180 °C y cubre una bandeja para hornear con papel para hornear.
En un tazón, mezcla la harina para repostería, la harina panadera, el bicarbonato de sodio, el polvo para hornear y la sal.
En otro tazón, bate la mantequilla junto con el azúcar morena y el azúcar blanca hasta obtener una mezcla suave y cremosa.
Agrega el huevo y la pasta de vainilla. Mezcla hasta incorporar por completo.
Incorpora los ingredientes secos y mezcla únicamente hasta que desaparezcan los rastros de harina. No sobremezcles.
Agrega el chocolate y mezcla suavemente para distribuirlo de manera uniforme.
Cubre la masa y refrigérala durante al menos 1 hora o, idealmente, toda la noche.
Forma bolas de masa y colócalas sobre la bandeja, dejando suficiente espacio entre cada una.
Hornea durante 10 a 14 minutos, o hasta que los bordes estén dorados y el centro aún se vea ligeramente suave.
Apenas salgan del horno, espolvorea un poco de sal marina en escamas por encima. Deja enfriar unos minutos antes de servir.
Nota: Si no consigues harina para repostería (cake flour) o harina panadera (bread flour), usa harina normal.

3 g fine sea salt
140 g salted butter, at room temperature
145 g dark brown sugar
125 g granulated sugar
1 large egg (50 g)
7 g vanilla bean paste
225 g milk chocolate chips *or you can use bittersweet chocolate, roughly chopped
Flaky sea salt, for finishing
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the cake flour, bread flour, baking soda, baking powder, and salt.
In a separate bowl, beat the butter, dark brown sugar, and granulated sugar until light and creamy.
Add the egg and vanilla bean paste, mixing until fully incorporated.
Add the dry ingredients to the wet ingredients and mix just until no dry streaks remain. Be careful not to overmix.
Fold in the chocolate until evenly distributed throughout the dough.
Cover the dough and refrigerate for at least 1 hour, or preferably overnight.
Scoop the dough into balls and place them on the prepared baking sheet, leaving enough space between each cookie.
Bake for 10–14 minutes, or until the edges are set and lightly golden while the centers still look slightly soft.
As soon as the cookies come out of the oven, sprinkle them with flaky sea salt. Let them cool for a few minutes before serving.
Note: If you can’t find cake flour or bread flour, regular all-purpose flour works well too.
