Albóndigas de Res con Tzatziki
Tzatziki
Ingredientes
2–3 cucharadas de pepino rallado y bien exprimido
½ taza de yogur griego
½ diente de ajo, rallado finamente
Jugo de ¼–½ limón (al gusto)
1 cucharadita de eneldo fresco picado (opcional)
Sal al gusto
Un chorrito de aceite de oliva extra virgen
Preparación
Después de rallar el pepino, exprímelo muy bien con las manos o con una toalla de cocina limpia para retirar la mayor cantidad de líquido posible.
Mezcla el pepino con el yogurt griego, el ajo, el jugo de limón, el eneldo, la sal y el aceite de oliva hasta obtener una salsa homogénea. Prueba y ajusta el limón o la sal si lo consideras necesario.
Albóndigas
Ingredientes
454 g de carne molida de res (90/10)
75 g de cebolla amarilla, picada finamente
3 dientes de ajo, picados finamente
1 huevo
3 cucharadas de perejil liso, picado
¼ de taza de panko
1 cucharadita de comino
1 cucharadita de orégano seco
¼ de cucharadita de canela
1 cucharadita de sal
½ cucharadita de pimienta negra
Preparación
En un bowl grande, mezcla todos los ingredientes hasta que estén bien incorporados. Procura no trabajar la mezcla en exceso para que las albóndigas queden jugosas.
Engrasa tus manos con un poco de aceite y forma albóndigas del tamaño de una pelota de golf (aproximadamente 35–40 g cada una).
Calienta un chorrito de aceite de oliva en una sartén grande a fuego medio. Cocina las albóndigas durante 8–10 minutos, girándolas cada par de minutos para que se doren de manera uniforme por todos los lados, hasta que alcancen una temperatura interna de 71°C (160°F).
Sirve las albóndigas calientes acompañadas del tzatziki.

Beef Meatballs with Tzatziki

2–3 tablespoons grated cucumber, well squeezed
½ cup Greek yogurt
½ garlic clove, finely grated
Juice of ¼–½ lemon, to taste
1 teaspoon finely chopped fresh dill (optional)
Salt, to taste
A drizzle of extra virgin olive oil
Instructions
After grating the cucumber, squeeze it very well using your hands or a clean kitchen towel to remove as much liquid as possible.
Combine the cucumber, Greek yogurt, garlic, lemon juice, dill (if using), salt, and olive oil in a bowl. Stir until smooth and creamy. Taste and adjust the salt or lemon juice as needed.
Beef Meatballs
Ingredients
454 g (1 lb) 90/10 ground beef
75 g yellow onion, finely diced
3 garlic cloves, finely minced
1 egg
3 tablespoons chopped flat-leaf parsley
¼ cup panko breadcrumbs
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon freshly ground black pepper
Instructions
In a large bowl, combine all the ingredients until just incorporated. Be careful not to overmix, as this helps keep the meatballs tender and juicy.
Lightly grease your hands with a little oil and shape the mixture into golf ball-sized meatballs (about 35–40 g each).
Heat a drizzle of olive oil in a large skillet over medium heat. Cook the meatballs for 8–10 minutes, turning them every couple of minutes so they brown evenly on all sides, until they reach an internal temperature of 160°F (71°C).
Serve warm with the tzatziki.
