These are heavily inspired by the chips at one of my favourite London restaurants, Dover Street Counter. The chips are appropriately named Disco Fries and come adorned in all manner of delicious things. The thing that really makes them stand out is the hit of sesame and soy, sweet, nutty and almost creamy against pickled chilli. These are my own interpretation with potatoes given a char and a bit of a smoke on the BBQ. I love charring spring oinions on the BBQ in summer and usually do it when the BBQ is hot and cooling down to the ideal temperature to cook the meat. La Ratte potatoes are perhaps my favourite potato. Nutty and waxy they are delicious simply boiled and tossed in butter but I love them roasted and if you can get hold of them make all the difference in this. I cooked these alongside some very good ginger miso chicken skewers and prawn kebabs (recipes coming next week)or a BBQ with friends but they would be good alongside anything.

I highly recommend booking a seat at Dover Street counter for a plate of the original disco fries and a cold martini. I shared a list here of some of my favourite restaurants at the moment here too if you are looking for somewhere delicious to go for dinner.
