I don’t think I will ever get bored of roast chicken. It’s the thing I crave when I’m tired, when I’m hungry, when I’ve been travelling away from home for a while, and whenever I am hungover. A good roast chicken can improve most situations IMO. The smell of it crisping up in the oven instantly recognisable and familiar - a reminder that everything is going to be just fine!
Roast chicken is really only made better by the accompaniment of good potatoes but to be honest I find classic roast potatoes a bit of a faff. This is almost a cheats roast in that you’ve got the chicken, potatoes and veg all in one. The potatoes require a par-boil on the hob beforehand but there is no need to peel them and no danger of being spattered in hot oil or goose fat. The leeks soften under the chicken, and whilst the bird rests the potatoes go into the tray to colour and crisp whilst soaking up all the flavour from the roasting juices. A crisp green salad is all you need but I made these Caesar beans the other day and they brought a welcome tangy crunch.
