Cherries bring me joy.

I cannot walk past a box of glistening purple-red cherries without buying a bag (even if they do currently cost the same as a small house deposit). I always feel a bit like a Disney character eating cherries, using my teeth to pluck the fruit from the stem with dramatic satisfaction. Whenever I find a pair still holding onto each other I pretend they are earrings, hooking them over my sears so that the fruit jangles below my earlobes. My toddler finds this very amusing. Then we will eat them together and I will show her my purple tongue and she will laugh.

I keep my cherries in the fridge. I know you probably shouldn’t. But I love cold fruit. I love seeing the bowl smiling up at me as I open the fridge. Popping one into my mouth as I put back the milk or pull out the mustard. Cheerful, cool, juicy joy.

Usually I reserve cherries for snacking, or sometimes salad like this one (don’t know it till you try it) but this week I baked them into a pie.

ps. You don’t have to make the pistachio whipped cream but all Im saying is that cherries love pistachio and there’s something quite marvellous about the nutty cream melting into the fruit like a pink and green marble.
