It is definitely summery and HOT, so you might want to enjoy some of the ice cream recipes on NoMoreCrohn’s desserts page! Maybe some Vanilla Ice Cream with the apple pie at the bottom of the letter? We had the pie last night and really enjoyed it!

We had a good camping trip in the local mountains last weekend. It was hot in the mountains, but it was way hotter down here, so we were glad to be in a cool-ish location! One night we went stargazing out in a field with a local astronomy club and enjoyed seeing shooting stars, constellations and planets, and plenty of satellites…! It was special to spend time together as a family, as our oldest is off to college in a month…! Thankfully he will still be close by, but he will be living on campus, so it’s a big shift for our family.

Here are some of the pretty views on the trip. . .

My planned meals went well, although I did forget to bring the pineapple for the Polynesian Pile-On! Thankfully, it was still delicious. I added a dallop of SCD yogurt on top to substitute for the gravy I couldn’t have, and it was great:

My husband Jim enjoys cooking up sunrise sandwiches for breakfast when we camp, and this is the yummy version he made for me and him (he’s on a low-carb diet), made with Costco pre-cooked bacon, Tillamook sliced cheddar cheese, and egg, cooked in butter. (I took a bite and then realized it was so good I should take a picture for you…!)

A fun find this trip was unsweetened iced tea called Gold Peak. It has such a great flavor and lists no ingredients but black tea. Perfect for trips or when on the go around town. . .

My garden has been growing like crazy! I have some Marzano tomatoes that I’m hoping will make some good SCD marinara sauce. I asked my friend Anna who lives in Italy to share with me how to make authentic Italian marinara sauce, and I hope to share that recipe with you sometime this summer!

I enjoy drinking black tea in the garden in the mornings, and our cat seems to love “her garden” as well. :)

I’m trying to just soak summer in, how about you?

I wanted to share an update on how my husband, David is doing on the diet. As you know, with our daughter Erin on the diet all these years, and with me working with her on NoMoreCrohns all these years, we’re very familiar with the diet and its benefits! But, starting it himself, in his 70’s, is different from knowing about it!

My journey has been up and down, with his progress.

His personality is one that likes to test things, so if he’s doing better, he likes to test to see if he can now eat an illegal! But here’s what has happened to me... you probably know we’re faith-based people, so I give credit to God for popping this new idea into my head: “Don’t take it personally and resent him. He’s suffering. Bless him by providing the food and let him work it out and learn as he goes, in his own way.” I told him my epiphany and I could read the relief all over him! And it wasn’t long until he said, “I’m gonna have to be really strict on the SCD and see if it’ll really help me.” Yay! And he really is making progress now!

So, I’m continuing making and freezing Jim’s Fluffy Waffles, Crunchy Honey Granola, Mini-Meatballs, and Garlic Cheese Pizza Crusts. We also love the Best Oven Frittata. (Links to Member recipes are below in the Member section of the letter.)

All of these items have been lifesavers and he likes them! I’m now making the Garlic Cheese Pizza Crusts into 12 individual crusts per recipe, and he toasts them to have for breakfast with avocado or with egg, cheese, and bacon! Lately he’s tried toasting them then adding butter and honey, and he feels like he’s cheating... it reminds him of a graham cracker... just how he likes them - dripping with honey! So, today, I made a double batch without the garlic, so they’re more neutral in flavor and he can use them with sweet stuff!
