It was fun to try a new recipe this week, using the pretty Nordic Ware Heart Wildflower bundt cake pan I bought last week! This vanilla cake with a strawberry twist is perfect for Valentine’s Day tomorrow (or any day, for that matter!).
And I want to share a favorite recipe our family enjoyed this week. It has such great flavors and it was pretty quick and easy to put together, too. Bok choy is a vegetable I never use, so it was fun to experience its flavor in this dish!
Stir-Fried Chicken with Bok Choy was a great dinner the whole family loved! (I added rice on the side for everyone else.)

Who do you love? What do you love? I love my family, near and far, and I love lots of things, including helping people succeed on the SCD! It gives me joy to see Erin thriving on the SCD, and I love hearing of your success, too. Our pastor once said, “You can take a picture of love!” Yes, love boils down to actions, doesn’t it?
Let’s translate that into Valentine’s Day actions! Food speaks, so let’s make a meal and/or some treats that say, “I Love You!” (Self-care counts!)

Vanilla Valentine Cake
This was a lot of fun to make! It was a good challenge to come up with some creative ways to decorate this yummy cake for Valentine’s Day.
