Thanks for being patient these past few weeks, as everything was a bit off schedule! Our family made a trip to the Midwest for a memorial plus a sweet visit to my sister and her family. (More on that below!) Now I’m back in the saddle, and happy to be sharing my SCD life with you once again! Here’s what I’m sharing this week:

Midwest Trip, Part One
From Indiana to Ohio, let me just say that throughout the trip Culver’s was my friend! When not eating the food I brought or enjoying homemade meals at my sister’s house, I subsisted on their bun-less hamburger patties and veggies, homey atmosphere, and unsweet iced teas…! ;-)
Here’s my order receipt, showing my standard order: A hamburger with two patties with no seasoning and no bun, grilled onions, lettuce, and tomatoes:
Food I brought with me
It was important to bring plenty of food along with me. This ensured I had some variety and enough to eat, helping me to stick to the SCD more easily. Planning ahead is so important for a trip, so I made sure to do that well ahead of time. I shopped at Trader Joe’s and Costco, and a couple of weeks ahead placed an order at Wellbee’s that was shipped promptly. I also made these SCD shortbread cookies (using honey) a couple of days ahead so I wouldn’t eat them all up ahead of time…!
Here’s what I packed in my suitcase:
Unsalted Dry Toasted Pecans (Trader Joe’s)
Dried pineapple (Trader Joe’s)
Freeze dried Mango (Trader Joe’s) - my favorite!
Dried Persimmon Slices (Costco)
Granola (Wellbee’s)
Melba Toast from (Wellbee’s)
Copycat Lara Bars (recipe shared a couple of weeks ago!) in snap-lock containers
Applesauce (Wellbee’s)
A small honey (Walmart)
SCD cookies
Some plastic cups, forks, and spoons to serve food in the hotel
I also successfully packed SCD yogurt in my checked luggage (along with all of the above food). I put it in a large plastic Ziplock container, taped, and wrapped next to several ice blocks in two plastic bags with a note that said “Yogurt for medical diet” on top. Here’s how it looked once I unwrapped the plastic bags at the hotel to store in the fridge:
It traveled perfectly, lasted well throughout the week-long trip, and was a great staple food for me. Having the ice blocks worked out well, too, as I used them when packing a lunch when we went sightseeing.
We also bought apples, tangerines, and bananas at the store when we got there.
All of this prep paid off as I was well-fed the whole trip and stuck to the SCD 100%!

German Mocha Cake is my go-to cake every year now because it is just that good!
