Well, I think I can safely say that this winter has been way warmer than usual here in Colorado. I just read that it’s been the warmest winter on record…and we have daffodils popping up in the garden about a month early! (I’m glad I planted dozens of bulbs last fall! It’s going to be great seeing early flowers every year…)
I’ve been taking it easy this week, as I’ve had a whole lot going on lately so I’m focusing on replenishing my energy heading into another busy few weeks. To do this, I’m:
using food from the freezer like pre-cooked personal meatloaves, shredded chicken, cashew bread, and SCD cookies & muffins. It really helps having frozen food as back-ups for busy times!
I am also giving myself permission to use paper plates for a while to cut down on some kitchen work.

Do you do anything for St. Patrick’s Day on March 17?
We like to... We have friends in Ireland, so that makes us more aware, but also, it’s just fun to do the food! It’s another excuse to jazz up the menu!
We have a St. Paddy’s Day Menu in our March/April “I Want To THRIVE” magazine, and the same recipes, plus a couple more, are in my cookbook, “International Feast: You Can Eat This!” Do you have the cookbook?
