Delicious Chicken Salad

Along with how to easily cook up shredded chicken!

This week I’m sharing with you a chicken salad that is so good, we’ve named it Delicious Chicken Salad! ;-) If your weather is hotter than usual (like here; we’re in the 80’s!), this recipe will be especially perfect this week! Enjoy on a bed of lettuce or with Cheese Lace Crackers. Yum!

(I like to use Avocado Oil Mayonnaise in recipes like this. It’s my favorite!)


Easier shredded chicken

Here’s an idea that may help you make easier chicken salad. . .Recently, I had a bit of an epiphany when I realized that I don’t have to cook whole chickens to get fresh chicken pre-cooked for recipes like salads and soups. (One of my least favorite kitchen jobs is picking meat off of chicken bones!)

Instead, I can just cook boneless chicken thighs and/or breasts in a crock pot, shred it, and freeze or refrigerate for future meals! (I know this may seem basic to some of you, but to me it was a gamechanger as it shortened and simplified the cooking process.) Now I only cook whole chickens when I am in need of chicken broth to replenish the stores in my freezer.

My favorite combination is chicken thighs & chicken breasts as the fattier thighs moisten the breasts nicely, but this week I cooked just thighs. It was so easy! I even cooked it overnight, adding to the simplicity.


My menu this week

This was what I planned for this past week’s meals. Lots of good ol’ favorites!

Monday: Thai Chicken and Vegetables

Tuesday: Bacon Cheeseburger Pie with lettuce and broccoli on the side, and Walmart brand mustard & Wellbees ketchup (plus other hamburger fixings for the rest of the family).

Wednesday: Pork Tacos - Here’s a picture of my lunch plate the next day with leftovers, which I made into a pork salad with what I had on hand, including Wellbees ketchup:

Friday: Out to eat at Five Guys. I order: “a hamburger in a bowl with two patties, lettuce, tomatoes, grilled onions, and green peppers.” I like to bring my own ketchup from Wellbees in a baggie to top it with.

And Apple Crumble was a treat I enjoyed making spur-of-the-moment one night (member recipe shared below). We enjoyed it for dessert and breakfast the next day.
