At the beginning of the week, we arrived home from a wonderful trip to California that included a visit to Yosemite and my grandma and other family as well! It was such a nice trip, and I’m looking forward to sharing more with you (highlighting the food that sustained me…!) soon. We’ve hit the ground running, as our oldest is moving into his dorm for his first year of college this week! So once I have time to organize my pictures I will fill you in. Here’s one of the pretty scenes we were treated to on our trip, for now!
Today I am excited to share with you some lunch ideas for back-to-school, a delicious muffin recipe from our website that would make a great side for a quick breakfast, and my mom’s account of her birthday tea that included cute SCD food for a family member.
For members, I’m sharing a delicious recipe for Cinnamon Coffee Cake Muffins that has been one of my favorites since starting the diet in 2001. Here’s a picture of these beauties:
I’m also sharing recipes for coffee cake and granola and highlighting the Have a Cooking Day booklet that will help you get ahead of the game with meal prep for the busy back-to-school season, as well as the Shopping Guide I put together to take the guesswork out of finding SCD products at the store.

A summer birthday tea is coming up! I love a tea party!
What’s so interesting is that now another member of our family is beginning to deal with gut health issues, and before things get away from her, she’s just ... going on the SCD! Why not, right?
It feels like half the family is on the SCD! And her husband is totally supportive and is even going on the diet too, both to help her out, and also to see if it might help him with various things. I’m so glad Erin learned about the SCD way back in 2001, started it, and has been free from Crohn’s symptoms ever since!
So, all that to say, I’m going to bring a little bitty gift bag to the tea with some things our girl can eat, to add to the plate of fruit and cheese the tea place will be providing. Here’s what I’m going to take along:
Cinnamon Coffee Cake Muffins - I made regular and mini. (Recipe is in the Club Recipe Vault and below for members.)
We have another recipe called Cinnamon Streusel Coffee Cake that is also great, and both are now in our Club Recipe Vault. (I’m not taking this one to the tea.)
Walnut stuffed Medjool dates - (Pit a date and fill to overflowing with chopped walnut pieces, then pinch it back together. You can put each date in a mini muffin paper.)
Lemon Cookies - (Recipe coming soon to the member Recipe Vault, and it’s also in my “Food With Friends” cookbook.)
I’ve been busy! Yesterday I made a double batch of:
Jim’s Fluffy Pancakes - made as waffles. I like to add a little bit of water as needed so the batter flows into the waffle maker more smoothly.
Crunchy Honey Granola - which David & I both love. We don’t want to run out of it! (Recipe is in our SCD Club Recipe Vault and linked below for members!)
