i’ve been trying to get more out of my comfort zone when it comes to baking—flavors, techniques, textures. i used to get so stuck in the mindset that cookies have to be or look a certain way & always be consistent, but i learned that’s not the case at all !! cookies & baking in general should be fun, & recipes won’t always work out but that’s the point !! i feel like a scientist
i took my base cookie recipe & adjusted it a tad, since i wanted this cookie to be a bit thicker (more “bakery style”, if u will). this meant more browned butter, more brown sugar instead of white, & an extra egg yolk.
this resulted in these thick (honestly they still weren’t as thick as i wanted them to be but it’s a work in progress!), chewy, almost-savory-but-still-sweet cookies that taste so. freaking. good.
what we’re making today:
thick, chewy, bakery-style gluten-free cookies with rich salted toffee, browned butter, dark chocolate chunks, french toast pieces, & flakey salt. they’re beautifully golden brown, look & taste fancy, & a great excuse to have dessert for breakfast.
