my friend (& hair stylist) brooke sent me an instagram dm suggesting i make cookies with cadbury mini eggs and i thought… yes… why not gluten-free-ify them?
honestly before this year i never ate a cadbury egg. they were never super popular in the usa tbh. BUT my british friend phoebe told me about flakes & omg… i am ADDICTED

today we are making these DELICIOUS, gluten free, thin, chewy cadbury mini egg cookies with crispy edges. the crushed mini eggs melt ever so slightly into the dough, but i also added whole mini eggs to create that wonderful texture contrast.
