Last weeks heatwave was actually insane, London is not built for this - somehow it feels even hotter than peak Tokyo summer, but in fairness at least I have AC there. All I’ve been craving since is cooling foods, Asian food, lots of fish and veg. Poke bowls are perfect for this temperature, and you can sub in cooked fish like grilled salmon, or nice oily tinned sardines (I love the waitrose ones!!) if you wanted something a bit more supermarket friendly.
Slice salmon into chunks and put in a bowl with avocado.
Add grated garlic, lemon juice, toasted sesame oil and soy sauce in a bowl and mix well. Let it sit for 5 minutes or so to soak in the flavour and serve over steaming hot rice.
I top mine with new season sweet white onions - sliced thinly and put in ice cold water.
