Who knew an ice cold matcha was the answer to a heatwave

It’s still very hot in London, and I need the sea ASAP. Been pottering out and about in the city which means the need for matcha - the JENKI iced coconut milk flat green with an addition of collagen is my go-to drink in the weather: light, slightly sweet and easy to drink.

I got really into making fun matcha at home back in Tokyo, especially around spring when I was back for a while. My two obsessions were this mango one and a red bean one (coming asap): it’s fruity and a little indulgent but still remains light and delicious.

Would also be great as a smoothie if you just want to blend it all together and add a handful of spinach. Or, if you can’t be bothered then I would go to JENKI (not sponsored, I just go all the time lol) for the mango matcha with coconut cold foam.

Anyway, a recipe-ish:

Blend ripe mango (or frozen, if you want a thicker consistency) with soy milk and a tablespoon of coconut cream.

Whisk matcha with water.

Fill a cup with finely chopped ripe mango, ice, and top with the mango milk, matcha and matcha. Mix and enjoy!
