Small apple cake for two

Last year I started a series on my Instagram and TikTok unofficially named “toaster oven bakes.” Very unique and creative, I know.

To my surprise, though I guess at the same time not, there are many people out here operating out of tiny kitchens. Where oven space is limited or communal.

As someone who does not understand the point of owning a slice-style toaster, I mean they’re basically as big as the oven version - I’m more than happy to be coming back for season 2 of toaster oven bakes!

We’re kicking off with these small apple cakes for two. The batter is split between two ramekins for easy toaster oven access.

The cake itself is spiced with cinnamon plus a dash of nutmeg, and finished with an optional cream cheese drizzle once baked.

Just a reminder, apple season starts in the summer (and my fall-loving heart rejoices). To celebrate, we’re folding freshly sliced apples into our batter as well as spiraling a few on top before baking.
