Simple peach galette

Until last summer, I was a peach pie virgin. And boy oh BOY had I been missing out.

I love me a bowl of fresh peaches on their own, topping oatmeal, layered within a parfait. But wrapped in pie crust? Now and forever sold.

This simple peach pie galette is quick and easy to assemble, especially since the peaches go in as-is (no cooking required). Not only is it wildly tasty, but an artisanal stunner of a bake, if I do say so myself.

It’s an all-butter pie crust for that extra flake, paired with a brown sugar cream cheese spread to bring in that classic peach pie flavor. The peaches themselves are sliced thin and spiraled on top before the crust is folded over the edge.
