We Minnesotans try to get our fill of sweet corn every August. The growing season is short so we cherish our produce when we get it. I love a simple corn on the cob, but one of my favorite ways to enjoy fresh corn is in ice cream!

If you’ve recently made one of my recipes, please remember to leave a rating and review, it helps other people find the recipes! And please share photos of the bakes you’ve made, so I can see what you’ve created!

Here are a few recipes from my exclusive Recipe Index for paid subscribers that might fit your menu this time of year.

  • Corn Soufflé: This recipe is technically savory, but the sweetness of the corn shines through. Most corn soufflés don’t rise so high or have such a delicate texture. In this post I walk you through my method to this dish that can be served at a picnic or a dinner party on the deck.

  • My Favorite One-Bowl Zucchini Cake: Are you up to your knees in zucchini? Put them to good use in this simple one-bowl dessert. It is delicious on its own or with cream cheese frosting and berries.

  • Corn Salad with a Tahini Twist: This recipe comes to us from Rachel Simons of Seed & Mill fame. It’s inspired by elote but with tahini as the creamy element. It’s a must-try!
