I teased these in last week’s post because I wasn’t sure if this idea was a little…out there. You guys had such an enthusiastic response that I had to share. These ricotta biscuits are such a perfect base for just about any filling. Add some juicy fruit and cream to make dessert, make them into BLTs, or turn them into these savory shortcakes.
They are made with a combination of ricotta and buttermilk which gives them a light and tender texture. They bake up with crisp golden tops and the mixing and folding method ensures that there lots of layers. The dough is patted into a squares then simply cut with a knife (rather than circles) so there is no rerolling and cutting necessary. Then they are baked close and cozy to each other on a baking sheet so they stay soft and moist under those crisp tops. They are truly my ideal shortcake.
These savory ones are filled with juicy summer tomatoes, prepared just like the ones from this pasta, and a swipe of ricotta. You could add a handful of herbs to the mix or substitute the ricotta with whipped feta cheese. They would also be delicious with butter and jam or with eggs or with anything else you can think of.
