What do you look for in a cookie? I like something sweet and salty with a little bit of texture. I’m not a traditionalist by any stretch, but I do like the flavors to be simple and the ingredient list to be relatively short.
These are a mashup of my favorite fudgy peanut butter cookies with some oatmeal for texture and toastiness. You could certainly stop there, but I had a bag of freeze dried blueberries in my cabinet that was looking lonely so into the mix they went. They gave the cookies a fun peanut butter and jelly vibe and added some fresh flavor to the mix. If you don’t want to track down freeze dried berries you could add any dried fruit that sounds good to you, or chocolate chips.
