A Really (Really) Easy Peach Tart

Did you guys know that Colorado grows some of the best peaches in the US? For whatever reason (I’m guessing it has something to do with New Jersey) we don’t get them in the NYC, but whenever I am in the midwest I seek them out. They are big and juicy, soft and sweet, and FREESTONE. That means that the pit easily pops out when the peach is sliced. If you’ve ever tried to neatly slice a clingstone peach, you know how frustrating it is to not be able to get all of the fruit off of the pit. With freestones, those pits fall right out allowing the peach to be sliced into perfect wedges.

Peach pie is one of the greatest joys of summer, but they are hard to get right. You want the peaches to be tender but not mushy, sliceable but not totally gelatinized, sweet and floral but with a little hint of tartness, and by all means no soggy bottom.

This tart alleviates a lot of these problems. The crust is thin and crisp, the peaches are spread into a single layer (more or less) so they don’t need a lot of thickener to hold them together, and there is only enough sugar to enhance their flavor. I added the tiniest pinch of cinnamon and salt to compliment their flavor. Juicy summer peaches barely need any adornment.

The inspiration comes from a peach tart once published on food52, but I have made it even easier, and reduced the sugar quite a bit. The base is a simple pat in the pan mixture of butter, sugar, and flour and the filling is all about the peaches. It comes together in a few minutes with no chilling required, just make sure to use the best, juiciest peaches you can find. A removable bottom tart pan works best here, but a springform will work too. If you only have a cake pan, that will work in a pinch, but the slices might be a little tricky to get out of the pan. I’m sure you can manage. If not, serve scoops with ice cream and call it a crumble.
