𖦁 the ingredients:
these ingredients come together to create that perfect blend of brownie and cheesecake, with a little oreo crunch thrown in for good measure.
cream cheese: this is what makes the cheesecake swirl super creamy and delicious. make sure it’s softened to room temperature so it mixes in smoothly.
egg: you’ll need an egg for the cheesecake swirl to make it light and fluffy.
granulated sugar: this sweetens the cheesecake layer just the right amount, balancing the richness of the brownie base.
vanilla extract: both the cheesecake swirl and the brownie base get a little vanilla flavor, making the whole dessert just that much more aromatic and delicious.
unsalted butter: butter gives the brownie base its rich, fudgy texture. it’s a must for achieving that perfect consistency.
semisweet chocolate chips: these create the deep, chocolatey flavor that makes brownies so irresistible.
more sugar: granulated sugar is key to giving the brownies the right amount of sweetness and structure.
eggs + egg yolk: room temp eggs help give the brownie batter that perfect smooth texture and help it rise while baking.
all-purpose flour: the base for the brownie batter, giving it just enough structure to hold everything together.
cocoa powder: adds that rich chocolate flavor. use unsweetened cocoa for the best balance.
salt: a pinch of salt enhances the flavors of the chocolate and the cheesecake.
oreos: this is where the magic happens. chopped oreos folded into the batter give those delicious crunchy bits, and topping them at the end adds even more texture.
𖦁 how to make oreo cheesecake brownies:
this recipe is straightforward, but the end result is so impressive. with the right mix of brownie and cheesecake, plus that oreo crunch, it's a winning combination.
step 1: preheat oven & prepare pan
preheat your oven to 350°f (175°c). line an 8x8-inch baking pan with parchment paper or lightly grease it.
step 2: make the cheesecake swirl
in a medium bowl, beat together the cream cheese, egg, sugar, and vanilla extract until it’s smooth and creamy. set aside.
step 3: make the brownie batter
in a separate bowl, melt the butter and chocolate chips together. once melted, stir in the granulated sugar, eggs, and vanilla extract until smooth.
then add in the flour, cocoa powder, and salt. mix until well combined.
reserve 1/2 cup of the brownie batter and mix it with 2 tablespoons of water to thin it out for the swirl later.
step 4: assemble the brownies
spread the brownie batter into the prepared pan in an even layer.
pour the cheesecake mixture over the brownie batter, then drop spoonfuls of the thinned brownie batter on top.
sprinkle the chopped oreos over the top, and use a knife to gently swirl everything together.
step 5: bake
bake the brownies for around 30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. be careful not to overbake them – they should be fudgy!
step 6: cool & chill
let the brownies cool completely in the pan on a wire rack.
chill in the fridge for at least 1 hour before slicing, to make sure they hold together and cut cleanly.
𖦁 tips for perfect oreo cheesecake brownies:
don’t overmix the cheesecake swirl: mix it just until smooth to keep it creamy and light.
reserve enough brownie batter for the swirl: the thinned-out batter makes the swirl beautiful and easy to work with.
cool completely before slicing: this gives the brownies time to set up and hold their shape when you cut them.
chill before slicing: chilling makes the brownies easier to slice, and also lets the flavors meld together.
𖦁 can i freeze these brownies?
yes, absolutely! you can freeze the brownies for up to 3 months. just make sure they’re completely cooled, then wrap them tightly in plastic wrap or foil. when you're ready to enjoy them, let them thaw in the fridge or at room temperature.
