Today (or should I say tonight?), I’m coming at you from the Salt Lake City airport, and let me tell you... it’s been a journey! If you know me, you know I struggle with flight anxiety so having to de-board our plane at 2am due to an aircraft malfunction isn’t exactly the most settling of situations! We spent the night at the airport and are gearing up for the next available flight in the morning. We’ve been in Park City since Thursday for the first ever Chef’s Table Festival which has been absolutely INCREDIBLE. I’ll do a full post detailing the entire experience more, but it’s truly been the most amazing weekend that’s reminded me that the beauty of food really boils down to the way it brings people from all over the world, from all walks of life, together.

I hope you had a wonderful weekend also, and I’m writing this to make your meals this week both easier and more delicious. This time of year really starts to feel like everyone is getting back into a routine. And with that routine comes the common question of WTF To Make For Dinner?”. I rounded up seven incredibly simple dishes that are perfect for the week ahead and give you one less thing to think about. There’s a ton of variety in these recipes so no two nights will feel the same, and what I love most about them is that most rely on seasonal ingredients. Below you’ll find some of my favorite dishes paired perfectly for the day of the week. These include:

We’re hosting our second Via Rosa tour to Parma in March 2027. It’s one of our favorite places we’ve ever been—pure foodie and wine lover heaven. Some of my all-time favorite bites have happened there. There are still a few spots left, and I’d love nothing more than to go together!

I love cooking salmon for dinner, but it can be tricky to cook individual filets for a crowd (so much searing!). That’s why I love this hands-off sheet pan method, which is so ridiculously easy. Instead of cooking single portions of salmon, I just bake up an entire one pound filet in the oven, then divide it up into portions once it’s done cooking.
