Hello Friends,
One of the greatest joys of my work is helping transform an idea into something tangible—a place where people gather, share meals, and create memories.
Over the past several months, I’ve had the privilege of working with Akhil Viz, founder of Vizzi in Long Beach, California, to help bring his vision for a plant-based fast casual restaurant to life.
When Akhil and I first connected, Vizzi existed as an exciting concept with a clear mission: to create bold, approachable, plant-based comfort food that would appeal not only to vegans, but to anyone who appreciates great food.
What followed was a truly collaborative journey.
Together, we worked through nearly every aspect of developing the restaurant, including:
Plant-based menu development
Recipe creation and testing
Food cost analysis and menu engineering
Kitchen workflow and operational systems
Ingredient sourcing
Staff training
Operations manuals and standard operating procedures
Soft opening and launch support
As many of you know, I love creating recipes. But what has surprised me over the past year is how much I enjoy the broader process of hospitality consulting—helping founders solve problems, build efficient systems, and create restaurants that are both inspiring and operationally sustainable.
One of the most meaningful compliments I received came from Akhil himself:
“From menu development and recipe creation to kitchen systems, staff training, food costing, and launch support, Mark’s expertise touched every aspect of our opening.”
One thing I’m especially grateful for is that our relationship grew beyond a typical consultant-client engagement. There were plenty of texts, phone calls, and troubleshooting sessions outside the formal scope of the project—all with one shared goal: helping Vizzi succeed.
As Akhil shared:
“What impressed me most was that he consistently went above and beyond the original scope of the project. He was always accessible, responsive, and genuinely invested in Vizzi’s success.”
For me, that’s what hospitality is all about.
It’s not simply developing recipes.
It’s partnering with people, solving challenges together, and helping transform vision into reality.
Seeing guests walk through the doors, enjoying food that only months earlier existed as handwritten notes and recipe tests, is incredibly rewarding.
I’m deeply grateful to Akhil and the entire Vizzi team for trusting me to be part of this journey, and I wish them continued success as they grow.
If you’re ever in the Long Beach area, I encourage you to stop by and experience Vizzi for yourself. It’s a wonderful example of what passion, perseverance, and collaboration can create.
This experience has reinforced something I’ve discovered over the past several months: I genuinely enjoy helping founders develop plant-based hospitality concepts.
Whether it’s launching a new restaurant, adding plant-based offerings to an existing menu, or refining kitchen systems and operations, I’d love to help more businesses bring their vision to life.
If you or someone you know is exploring a hospitality project, feel free to reply to this newsletter or visit my consulting page here to learn more.
Thank you, Akhil, for your partnership, your friendship, and for your generous testimonial. It means more than you know.
A Healing Technique To Create A Conscious Healing Community
Instead of a standard meditation, use this tactile, strategic ritual to align your daily economic and energetic output with global healing:
Take a blank piece of paper and draw three intersecting circles forming a triad. Label them Services (what you offer), Vision (your highest ideal for humanity), and Commerce (where you spend or earn money).
In the intersecting center, write the word Ahimsa (Non-violence) or Healing.
Spend five minutes mapping your current daily exchanges. Identify one business, founder, or service in your life that doesn’t align with your core vision.
Commit to a “Conscious Pivot”: Intentionally reallocate those financial resources or collaboration hours toward a plant-forward creator or local collective this week. By deliberately shifting your commerce, you actively weave yourself into the fabric of a healing community.
Luminaries of the Movement - “We are here to help people dream a new dream for themselves, a new dream for their community, and a new dream for the Earth.” — David “Avocado” Wolfe
The Power of the Collective True transformation requires more than individual effort—it requires a unified front. By actively engaging with visionary founders, Vegan Fusion is bridging the gap between innovative services, bold long-term visions, and conscious commerce. When we bring these elements together into a cohesive digital and culinary ecosystem, we create something far greater than a marketplace. We establish a living network designed to uplift the plant-forward movement. This novel integration of business and shared values provides the ultimate blueprint for systemic healing, offering a practical path to mend our hearts, strengthen our local communities, and ultimately elevate humanity.
With gratitude,
