Runkenbjerg 🌳
Spring is finally here! 🌷 And with longer days and more sunshine, it’s the perfect time to lace up your shoes and head out for some adventure - or even just a good walk in the fresh air.
This week, I want to share an easy hike we did some time ago: Runkenbjerg. It’s a hilltop trail in Vejle Ådal (river valley).
We parked near the trailhead and started our walk through a lush green forest, following this route here (you can pick from several well-marked trails). The path slowly winds upward until you reach the top of Runkenbjerg, about 95 meters above sea level. That might not sound like much - but from the top, the view over the Vejle River valley is truly spectacular.
On our way down the other side of the hill, something funny happened - we kept smelling goat’s cheese! 😄 At first, there were no goats in sight, just the scent. But as we reached the valley floor, we found a herd of goats grazing happily in the sun. Our little one was completely thrilled. 🐐
If you’re looking for something family-friendly, not too long, and full of spring charm, Runkenbjerg is such a good pick. 💚
🍽️ Recipe of the week
Agua de Horchata 🇲🇽
We recently returned from a wonderful trip to the USA and Mexico, and the memories are still dancing in our minds. So this week’s recipe is a little taste of that sunshine: Agua de Horchata, a traditional Mexican rice drink flavored with cinnamon and vanilla.
It’s sweet, creamy, and refreshing. Our little boy fell in love with it the first time he tried it. It’s great on warmer days and super easy to make at home. Serve it with ice, and add a pinch of extra cinnamon.
