This is less of a recipe and more of a reminder to let good summer tomatoes do their thing! Slice them into wedges, toss them with fresh herbs and red onion, then drizzle everything with a simple garlic-red wine vinaigrette.
That’s it. That’s the play. The salad brings freshness, acidity, and a big hit of color to the table, especially alongside crispy chicken, pimento cheese bites, and a cold glass of peach raspberry rum tea.
The tomatoes should be at room temperature.
You can do this with any variety or color of ripe tomato.
Sub the red wine vinegar for apple cider vinegar or white wine vinegar.
