I can’t believe it has taken me this long to make an Aperol cake. The bright, bitter orange liqueur is so beautiful; it was beyond time that I used it in a recipe. Paired with fresh orange and sweet strawberry, this Aperol sunset cake is for all you July birthday babies!
Aperol is easily identifiable by its bright orange color. You might recognize it served in large wine or balloon glass with lots of ice and fizz of an Aperol spritz, the iconic drink mixed with Prosecco.
Despite its pretty, playful decor (and it truly is a beauty- right?!), the cake has a slightly adult flavor profile.
The orange Aperol buttercream is mild - not too sweet and not too bitter, but perfectly silky smooth. Leaning into the Italian origins, I used a citrus olive oil cake base that gets soaked in bitter Aperol syrup. The strawberry jam, on the other hand, is quite sweet, punchy, and ties everything together beautifully.
It’s been some time since I went all out with the buttercream, and this cake was the perfect canvas to exercise my favorite ombré buttercream design. The buttercream starts out a pale orange color from the Aperol. To that, I added more orange and pink food coloring to create the sunset-like look.
