Happy Thursday! I hope you’re having a great week so far. I’m finally starting to feel settled into my new home, and it has been so nice to be out of moving-transition mode and back in the kitchen creating recipes for you. I can feel the inspiration starting to come back, and I’m excited to dive into more fresh, easy summer meals over the next few weeks.

Lately, I’ve been craving simple recipes that don’t require a lot of thought or effort, and that’s one of the reasons I love meal prep so much. During busy seasons of life, it gives you something reliable to fall back on. The best part is that meal prep can look different depending on what you need. Some weeks that might mean prepping full meals, while other weeks it might just be breakfasts or lunches. There’s no one right way to do it.

My favorite formula is prepping breakfast, lunch, dinner, and one easy snack or treat option. Having meals ready to go makes such a difference after morning workouts or during busy workdays when I need something quick and nourishing. Even if I only prep breakfast for the week, it still helps take one thing off my plate.

Now onto this week’s recipes! I’m especially excited about the Chicken Teriyaki & Veggies Sheet Pan Dinner. Everything cooks together on one pan, which means minimal cleanup, and the combination of tender chicken, fresh veggies, and teriyaki flavors is so good. It’s perfect for an easy weeknight dinner, or you can pair it with rice and portion it into meal prep containers for lunches throughout the week.

For breakfast, I made my High-Protein Breakfast Bowls, and they’ve been saving me this week. They’re packed with protein, easy to reheat, and keep me full all morning long.

For lunch, I prepped my Dill Pickle Tuna Salad. It’s incredibly simple to make and delicious served on sourdough toast, crackers, or however you like to enjoy tuna salad.

For snacks, I made Lemon Raspberry Chia Pudding. It’s refreshing, lightly sweet, and perfect for summer. I love keeping a few jars in the fridge to grab throughout the day whenever I need a quick snack.

And as always, I washed and prepped my fruit for the week to keep it fresh longer and make healthy snacking a little easier. Always helps so much!!
