Happy Thursday! I’ve got another meal prep coming your way, and I hope you all had a happy and safe Fourth of July! I can’t believe how quickly this summer is flying by! It feels like we were just kicking it off, and now we’re already settling into the middle of July.

After a fun holiday weekend, it feels good to get back into a routine, and this week’s meal prep has been exactly what I needed. As I start easing back into training, I’ve been focusing on fueling well after my runs and workouts, and these recipes have made that so much easier.

First up are my Green Chile Chicken Enchiladas, and this is a brand-new recipe for y’all! Enchiladas are honestly one of my favorite meals to prep because I swear they taste even better the next day. This version is super simple, packed with flavor, high in protein, and the ultimate comforting dinner.

For breakfast, I made my Pesto Mozzarella Make-Ahead Breakfast Sandwiches. If you’ve been around for a while, you know I’m obsessed with anything pesto, and this combination is so good. The eggs are baked with cottage cheese for an extra protein boost, and I love pairing one with a cup of coffee and some fresh fruit to start the day.

Lunch this week is my Street Corn Beef Bowls, and I’m not exaggerating when I say I could eat these every single week without getting tired of them. Sometimes I’ll make them with sweet potatoes, other times with rice, depending on what I’m in the mood for. The street corn mixture is so flavorful, and these bowls are packed with protein, carbs, and fiber to keep you full and fueled all afternoon.

For snacks, I made my Copycat Costco Heavenly Hunks, which is a Substack-exclusive recipe. They’re incredibly easy to make and give you that same delicious flavor as the Costco version right at home. They’re perfect to keep on hand for an easy snack, and one of my favorite ways to enjoy them is crumbled over a yogurt bowl for a little afternoon treat.

And as always, I finished my prep by washing and storing all of my fresh fruit. It’s such a simple habit, but it helps everything last longer and makes grabbing a healthy snack throughout the week so much easier.
