endless summer pasta salad

happy sunday honeys!!!

good news: I finally got a good peach last week after a month long pursuit for a delicious, ridiculously juicy peach. every peach I was getting was just NOT it - mealy, not juicy and just damn right disrespectful.

once I found (or shall I say it found me) this peach, I immediately went and bought more so I could make this pasta salad I’ve had on my summer list. if you don’t have a summer cooking list whatchu doing?

this pasta salad was inspired by the alfalfi coast salad from Alfalfa. if you’re not privy to Alfalfa - it’s a rather small salad chain from california but also in hoboken which is where I reside and frequently get this salad. it’s seasonal so when it’s out, I’m getting it. but of course in true katie fashion, we can make it at home……..and we can make it into a pasta salad.

anyway, the most major part of this salad was the crumbled crispy pepperoni and hot honey basil vinaigrette. this vin is sooooooo good I can drink it. my sister who is also obsessed with this salad thought I paid them to give me their recipe because it was so on point and even better than theirs. teaaaaaa!!! I took a few creative liberties to pasta salad-ify this and man it’s just perfect 2 me. it’s such an end of summer salad. makes me want some grilled chicken on the side reeeal bad.

and to speak to it’s praise some more, my mom who barely even eats carbs was obsessing over this, she literally drank the rest of the dressing I had leftover (lol???) you don’t have to do all that but definitely try it and let me know what you think!!!!!
