There are certain recipes that stay with you long after you stop making them.
Now that I’m off from private chef life for the summer and spending more time creating content, I’ve been looking back through my camera roll and found this sticky date cake I made for one of my clients. The second I saw it, I remembered exactly how my kitchen smelled that night: caramelizing sugar, warm cinnamon, butter, toasted dates, and just enough white miso to make everything feel a little more interesting.
It’s funny because when people think of being a private chef, they imagine extravagant ingredients or complicated techniques. But some of the most memorable desserts I’ve served are the simplest ones, just made with a little intention.
Sticky date cake has always been one of those desserts that feels like a hug. Soft, incredibly moist from Medjool dates, naturally sweet, and rich without being heavy. Instead of taking it in the traditional direction, I decided to add my own twist with a silky miso caramel.
If you’ve never added miso to caramel, trust me.
It doesn’t make the sauce taste savory. It makes it taste deeper. The sweetness becomes more balanced, the butter feels richer, and every bite somehow tastes more complex without anyone being able to put their finger on why.
That’s my favorite kind of cooking.
The little ingredient that makes someone stop mid-bite and ask, “Wait…what is that?”
When I plated this, I kept everything simple: a warm square of cake, a generous scoop of vanilla ice cream melting into the edges, ribbons of glossy miso caramel, toasted sliced almonds for crunch, and a tiny drizzle of good olive oil underneath. It sounds unconventional, but the fruity olive oil ties everything together and gives the dessert a restaurant-quality finish that makes every bite feel luxurious.
It’s sweet, salty, buttery, nutty, warm, cold, creamy, and just a little unexpected.

I’ve been spending the summer testing lighter recipes, fiber-packed breakfasts, and athlete-friendly meals, but every once in a while I crave something that’s simply cozy. Something you make on a rainy afternoon or for friends coming over for dinner. The kind of dessert that encourages everyone to stay at the table just a little longer.
This is that recipe.
It’s elegant enough for a dinner party but forgiving enough for a random Tuesday night when you have a box of dates sitting in the pantry and want your house to smell incredible.
