If you’ve been following me for a while, you already know I’m always looking for ways to make food that tastes indulgent while still doing something good for my body. Lately, I’ve been paying a lot more attention to fiber. Not because it’s trendy, but because it’s one of those things that can make such a difference in how you feel day to day.
More fiber usually means better digestion, steadier energy, and meals that actually keep you full instead of reaching for another snack an hour later. This dessert has about 18g of fiber per serving.
This chocolate pudding has quickly become one of my favorite ways to get more of it in.
I know avocado in dessert can sound a little questionable if you’ve never tried it before, but trust me. Once everything is blended together, you don’t taste the avocado. It simply gives the pudding the creamiest, most luxurious texture.
The cacao powder and melted dark chocolate make it rich and chocolatey, Medjool dates add natural sweetness, and the psyllium husk gives it an extra fiber boost while making the texture even thicker after it chills.
It honestly reminds me of those chocolate puddings I loved growing up, just with ingredients that leave me feeling good afterward instead of weighed down.
I finished mine with fresh raspberries and cacao nibs because I love the contrast. The raspberries add brightness, while the cacao nibs give you that little bit of crunch that makes every bite even better.
This is one of those recipes that feels like a treat but it’s also something I actually feel good eating. Whether you make it as an afternoon snack, a healthier dessert, or even meal prep a few jars for the week, it’s one of those recipes that’s almost too easy not to make.
