These little biscuits are basically a levelled up linzer. They’re somewhere between a classic bourbon and a black forest gateau. They’re super chocolatey, slightly boozy and somewhat tangy. Blackberries are just coming into season so I used my blackberry and balsamic jam to fill mine but they would also be excellent with raspberry, cherry or plum jam or even my banana miso jam if you wanted to go totally rogue.
You can, of course use any cutter you like. I made most of mine into a classic bourbon oblong but I couldn’t resist making a few little sausage dogs as well. I used these as a part of my late summer biscuit box but they would work perfectly in any Christmas biscuit box or just for a fancy little snack!
