For the cheese-pickle “bread”

  • 1 ½ cups shredded cheddar cheese, divided

  • 6-8 sandwich-cut pickle slices, patted dry

For the tuna salad

  • 1 can (5 oz) tuna, drained

  • 1 tbsp mayo

  • 1 tsp mustard

  • 1 tsp sriracha (adjust to taste)

  • Salt and pepper, to taste

For the toppings

  • A few fresh basil leaves

  • A few slices red onion

  • A few slices tomato

  • ½ avocado, sliced

  • Pinch of chili flakes

  1. Preheat your oven to 400°F.

  2. Use sandwich-cut pickle slices since they’re evenly thin, that’s probably your best move. Lay them out on parchment paper and pat them dry. This step is important, extra moisture will keep the cheese from crisping up.

  3. Line an oven tray with parchment paper and sprinkle a thin layer of cheddar on one side. Lay out the pickle slices like in the video, slightly overlapping, then add another thin layer of cheese on top.

  4. Bake for 25-28 minutes, until golden and crispy. Remove from the oven, let it cool just slightly, then gently peel away from the parchment.

  5. Now the fun part: assemble with whatever sandwich toppings you like. I made a simple spicy tuna salad with the tuna, a little mayo, mustard, sriracha, salt, and pepper, but make it however way you like. Add a layer of fresh basil (this brings so much flavor), some red onion, tomato, avocado, the spicy tuna, and a few chili flakes.

  6. Carefully roll it up tightly from the bottom, pressing gently as you go to keep everything compact. Slice it down the middle with a sharp knife, and enjoy.
