High Protein Sweet Potato, Beef & Cottage Cheese Bowl

For the sweet potato

  • 1 medium sweet potato, finely diced

  • 1 tsp olive oil

  • Salt and pepper

  • 2 tsp onion powder

  • 1 tsp chipotle powder

  • ½ tsp sweet paprika

For the beef

  • 1 lb lean ground beef (93/7)

  • 1 tsp olive oil

  • Salt and pepper

  • 1 tbsp chipotle powder

  • 1 tbsp onion powder

  • 1 tbsp oregano

  • 1 tbsp sweet paprika

For the bowl

  • A large handful of finely shredded lettuce per bowl

  • ⅓ cup cottage cheese per bowl

  • 4 oz cooked beef per bowl

  • Half a small avocado per bowl

  • Finely diced red onion

  • A handful of chopped cilantro

  • Sauce of choice (hot sauce or the creamy sriracha sauce below)

  • Optional: chili flakes, sesame seeds, extra veggies

For the creamy sriracha sauce

  • 2 tbsp mayonnaise

  • ¼ cup sriracha

  • 2 tbsp rice vinegar

  • ½ tsp soy sauce

  • 2 tsp powdered monk fruit sweetener

  • Juice of 1 lime

  • 1 garlic clove, grated

  • 1 scallion, thinly sliced (or a handful of chopped cilantro)

  • Salt and pepper, to taste

  1. Finely dice the sweet potato. You want it small so it cooks fast. Drizzle with 1 tsp olive oil, season with salt, pepper, onion powder, chipotle powder, and sweet paprika. Spread on a tray and roast at 400F for 22-25 minutes.

  2. Cook the ground beef in 1 tsp olive oil. Season with salt, pepper, chipotle powder, onion powder, oregano, and sweet paprika. Use a spoon or spatula to break it down into small pieces as it cooks. Get it browned up nicely, almost crispy, about 15-17 minutes.

  3. Once the sweet potato is roasted, divide it between 4 serving bowls or meal prep containers. Add a large handful of shredded lettuce, ⅓ cup cottage cheese, 4 oz of cooked beef, half a small avocado, diced red onion, chopped cilantro, and your sauce of choice, hot sauce or the creamy sriracha sauce below.

  4. For the sauce, mix the mayonnaise with sriracha, rice vinegar, soy sauce, monk fruit sweetener, lime juice, grated garlic, and sliced scallion (or cilantro). Season with salt and pepper, mix, then taste and adjust as needed.

  5. Top with any other veggies you like, chili flakes, and sesame seeds, and enjoy.Finish with a little more fresh mint, walnuts, feta, and dressing on top, and enjoy!
