High-Protein Beet & Chickpea Salad

One of the biggest misconceptions about healthy eating is that it has to be restrictive or complicated. The truth is, sometimes the simplest changes make the biggest impact.

One easy habit you can start this week? Add more color to your plate.

The vibrant colors in fruits and vegetables aren’t just beautiful—they’re a sign of the different vitamins, minerals, antioxidants, and plant compounds that nourish your body. By eating a variety of colors, you’re naturally supporting your energy, recovery, gut health, heart health, and immune system.

Earlier this summer, our July “Nourish & Refuel Wildflower Bingo theme focused on fueling our bodies well. I wanted to share a colorful, protein-packed recipe that’s perfect for meal prep or a quick lunch.

❤️ Beets

  • Rich in antioxidants and nitrates that may support blood flow and exercise performance.

  • Great source of folate and potassium.

🟡 Chickpeas

  • Provide plant-based protein and fiber to help keep you full.

  • Support healthy digestion and steady energy.

💚 Cucumber

  • Hydrating and refreshing.

  • Adds crunch with very few calories.

🧅 Red Onion & Garlic

  • Packed with compounds that support heart health and immunity.

  • Add incredible flavor without needing heavy sauces.

🤍 Feta Cheese

  • Adds creaminess, calcium, and a little extra protein.

🍋 Lemon Juice

  • Brightens the flavors while providing a boost of vitamin C.

🍗 Grilled Chicken

  • My favorite addition! It transforms this from a side salad into a balanced meal packed with high-quality protein to support muscle recovery and keep you satisfied longer.

With 4 oz grilled chicken

  • Calories: ~395

  • Protein: ~44g

  • Carbohydrates: ~19g

  • Fat: ~22g

  • Fiber: ~6g

Challenge yourself to eat the rainbow by including at least 3 different colors on your plate each day. It doesn’t have to be perfect; small changes add up over time.

Remember, healthy eating isn’t about cutting everything out. It’s about consistently giving your body the nutrients it needs to feel, move, and perform its best.
