I feel like in this society, we all overcommit a little. Because if we don’t say yes to everything, maybe we’ll miss out, or fail at something we didn’t even know we were being tested on, or just feel…guilty about canceling. At least that’s how it feels for me sometimes, and I’m finally ready to admit it.

So today we’re eating our feelings about being worn out. Tired.

If you told me six months ago I’d admit this on camera, I’d be embarrassed. But I think it’s time we normalize taking a night to recharge.

I love being social. I genuinely do. But I love just as much sitting on my couch with an easy dinner, a glass of wine, and doing absolutely nothing. The problem is, society kind of makes us feel like we should be doing something all the time — 25/8, not even 24/7, that’s how much it feels like sometimes.

So when I’m feeling lazy, my go-to dinner is a stuffed sweet potato clean-out situation. Growing up, my mom used to make us baked potatoes with cheese and broccoli. I realize now it was her “I had a busy day and this is easy meal” so now I just turn that into a full one, protein included, because apparently I’m an adult now.

This isn’t really a recipe so much as a “use what you have” formula, which honestly is the whole point. So take it as a recipe or as inspo for your next lounge-night-in.

Feeling Tired Stuffed Sweet Potato

  • 1 sweet potato

  • Frozen broccoli, however much you want

  • Leftover rotisserie chicken, shredded

  • Cheddar cheese

  • Cottage cheese or sour cream

  • Salsa

Method:

  1. Microwave or bake your sweet potato until fully cooked through.

    1. Microwave: Wash & pierce potato with fork. Microwave on heat-safe plate for about 6–8 minutes for a medium sweet potato, flipping halfway through.

    2. Oven (baked): Wash & pierce potato with fork. Place on baking sheet and heat at 400°F, about 45–60 minutes for a medium sweet potato (longer for larger ones). You’ll know it’s done when a fork slides in easily.

  2. While that’s going, cook the frozen broccoli on the stove until warmed through, then chop once it’s cooled slightly.

  3. Once the sweet potato is cooked, split it open and top with cheese, the chopped broccoli, the shredded rotisserie chicken, and more cheese on top.

  4. Bake for about 15 minutes, until the cheese is melted and everything’s warmed through.

  5. Top with cottage cheese and salsa.

    *Sour cream works great here too if cottage cheese isn’t your thing — or skip the topping entirely if you want to keep it simple.
